A simple blueberry pie with no unnecessary fuss
A tender pie made with everyday ingredients and fresh or frozen blueberries.

A soft base with plenty of berries
The most important ingredient in this recipe is the blueberry. Frozen berries do not need to be thawed: toss them lightly with potato starch first.
Method
Mix softened butter and sugar, add the egg, then fold in the flour and baking powder.
Spread the batter into a tin and scatter the blueberries on top.
Bake at 200°C for about 25 minutes and let the pie cool before serving.
Serve with vanilla custard or plain yoghurt. A small pinch of cardamom is lovely too.
